This 6" curved boning knife sports an RWL-34 Swedish Damasteel blade. For those that don't know, these new powdered knife steels have a better edge retention and toughness than all the typical knife steels we've experienced in the past. Incredibly sharp with a very long lasting edge. Perfect for the professional meat cutter or the serious home chef. When it does need a touchup, just run it on a smooth ceramic or diamond stone or rod to bring back that razor sharp edge.
If you are a pro, you will really enjoy the feel of this knife. It is a bit heavier than the most common 6" curved boning knives we typically see in the food processing environment. However, in tests, the meat cutters seem to like the extra weight as it seems to help in controlling the blade creating more confident cuts. The handle is made of Micarta, layered linen pressed together with polymers. Makes for a fantastic feel, even with gloved or wet hands. And the shape is one you can work with all day without creating hot spots so common with other brands.
