This Damascus steel butcher's knife was forged by hand in the USA by ABS Journeyman Smith and Forged in Fire champion, Matt Parkinson. The blade is forged from 1080 and 15n20 steel in a custom mosaic pattern. It is a well-balanced knife with a slight curve to the cutting edge. This allows the user to effectively chop, rock, and slice with a variety of techniques. It has narrow geometry behind the edge, allowing it to pass easily through your vegetables and shed pieces as you make additional cuts. The high-performance steels used in its construction have been perfectly heat-treated for maximum durability and edge retention.
The stabilized wood handle has been sculpted for good indexing and grip. The handle features a stainless bolster with a G10 spacer. The bolster's tight fit-up and the blade's full, hidden tang construction to prevent gaps for food particles and water which cause corrosion and bacterial growth.
The small amount of care this knife requires is more than made up for by its cutting ability. Wiping immediately after use and washing and drying before returning to the block is all that is needed. This knife should only be cleaned only by hand, washing with soap and water and dried thoroughly. If you will not be using the knife for extended periods, a light oiling with cooking oil can help prevent corrosion. With use, the knife will develop a deep patina that gives a deep warm color to the blade. Each patina is constantly evolving and is as unique as the meals it was used to prepare.
